Fantastic Breakfast...and a learning experience...

I don't know about you guys but I LOVE avocado's! In any form, whether it's plain on a salad or on a taco or in guacamole (mmmmmm) I just love them. And they are so incredibly good for you. I also love eggs. Sunny side up runny yummy eggs. I am always looking for a new way to make both and...Pinterest struck again...thankfully! 

This breakfast is fast, easy, very few ingredients and packed full of omega-3's! I put some grapes and a banana on the side and I was full until about one o'clock. Normally I will snack all morning long but I had no desire today. 

I took one avocado and cut in in half. Take the seed out. 


Next you take two eggs and crack them right in the middle. Now this is where I had a little learning experience...I didn't read that you should take out a little of the pulp to make more room for the egg. When I cracked the egg inside some of the white spilled out onto the foil...


I didn't think this would be a huge deal and it really wasn't but when I did take it out of the oven I realized that I probably should have cleaned this up before I put it in. I woke my husband out of a dead sleep with the smoke detector...oops! :) The white part of the egg did burn a little. 
Add some salt and pepper to your preference and throw it in the oven on 350 for about 20 minutes. 


I won't tell you what I think that burned egg looks like but I know one of my friends will know...so Apple, if you're reading this...don't say it!!
After I took them out I transferred to my bowl to transport to work and I added some yummy Siracha on top. 


I absolutely LOVED these and I can't wait to make them again!! Give them a try and let me know what you think!

  2. Yes! That would be perfect! You will probably leave the siracha off of course with a tender belly. They are extremely healthy!
